Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef or chicken (cut into bite-sized pieces)
  • 4 medium carrots, peeled and chopped
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 14.5 oz can diced tomatoes (with juice)
  • 4 cups beef or chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Prepare the Ingredients:

  • Chop the vegetables (onions, carrots, potatoes, celery) into uniform pieces. Cut the meat into bite-sized chunks if necessary. Set aside the herbs and seasonings.

Sauté the Vegetables:

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onions and garlic, stirring frequently until they’re fragrant and lightly golden this should take about 3-5 minutes.

Brown the Meat:

  • Add the meat (beef, chicken, or your preferred option) to the pot. Stir occasionally, allowing the meat to brown on all sides. This will add rich flavor to the stew.

Add the Tomatoes and Stock:

  • Pour in the diced tomatoes (with their juice) and add the stock to the pot. Stir to combine. Add the herbs (bay leaves, thyme) and seasonings (salt, pepper). Bring the mixture to a boil.

Simmer the Stew:

  • Reduce the heat to low and cover the pot. Let the stew simmer for about 1 hour, stirring occasionally. During this time, the flavors will meld together, and the meat will become tender.

Add the Potatoes and Carrots:

  • After an hour, add the chopped potatoes and carrots to the pot. Stir to combine and let the stew simmer for another 30 minutes or until the vegetables are tender.

Serve:

  • Once everything is cooked through and the flavors have melded, remove the stew from heat. Ladle the stew into bowls, garnish with fresh parsley, and serve hot.

Optional:

  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. The stew often tastes even better the next day!
